Ingrediants
4 eggs
3 potatoes
1 small onion
˝ cup of olive oil
3/8 T. salt
Dash of pepper for seasoning
Preparation: Scrub and peel potatoes & slice onions. Dice potatoes. In a frying pan, sauté potatoes and onions in olive oil until they are lightly browned. Add salt (pepper optional). Beat the eggs completely and pour them over the potatoes and onion mixture in pan. Cook the mixture over low heat for about 4 minutes or until the eggs set. Place a plate over the frying pan and flip the tortilla out onto the plate. Slide the tortilla back in the pan, the uncooked side down.
